Connie Covington, 66, of Gainesville, TX, passed away January 12, 2025 in Gainesville.

Connie was born July 15, 1958 in Austin, TX.  She was a well-known cook in the Gainesville area all her life.  Connie loved what she did and fed countless individuals through the Hitchin’ Post, Gainesville Truck Stop, Waffle Inn, and several nursing homes in the area.  She also owned the RC County Café.  She will be dearly missed by those that loved her.

Survivors include: husband Ricky Keith Covington; siblings Donnie Ashlock, Dale Ashlock, Wayne Ashlock, Rhonda Jones, Jessie McClure, and Tammy Clark; children Chester (Tooter) Hoover, Tammy Stevens, Tommie Dee Magee (husband Patrick), and Tommy Hoover, Jr.; grandchildren Kenzie Clark, Ray Clark, Cheyenne Hoover, Cloie Underwood, Kalyee Underwood, Noah Magee, and Ava Magee; many great-grandchildren; and numerous nieces and nephews.

Predeceased by: late husband Tommy Lynn Hoover, Sr.; father Lloyd Myer Ashlock, Sr.; mother Wanda Bernice (Pugh) Ashlock; and brothers Lloyd Myer Ashlock, Jr. and Jerry Ashlock.

The family will receive friends on Wednesday, January 15, 2025, from 6:30 to 7:30 p.m., at Geo. J. Carroll & Son Funeral Home, Gainesville.  A funeral service is scheduled to begin at 2:00 p.m. on Thursday, January 16, 2025 in Geo. J. Carroll & Son’s Chapel.  Interment will follow at Fairview Cemetery.
